I fondly recall seeking out the trays with the yellow cellophane upon arriving at parties; that meant there was great snack foods to be had. A tray of little croquettes, a tray of “cangrejitos” and “pastelitos”, a tray of “bocaditos” – sublime! Now, I don’t know about the rest of my family and friends, but to me, a birthday party wasn’t complete without them – especially the bocaditos. Sometimes, that would be the only food you’d have all day!

Bocaditos means “little bites” or “little mouthfuls” in Spanish. I’ve seen a few recipes that call for making these with deviled ham. I say, “Blasphemy!”
While most commonly served at parties, this ham spread is the perfect finger sandwich filling. It doesn’t get any more simple and delicious than the recipe below. If you’re having a party or picnic, make a huge batch and watch them disappear in the blink of an eye.

Bocaditos de Jamon (Little Ham Bites)
Serves 4
A savory, but not overbearing ham spread for a quick nibble that's ridiculously fast and easy to make.

Ingredients
  1. 1 lb cooked ham (not deli sliced)
  2. 1 8oz package of cream cheese
  3. 3/4 cup mayonnaise
  4. 1 4oz jar diced/sliced pimentos, drained
  5. 1/2 tsp pepper
  6. 1 pkg of (12) King's Hawaiian dinner rolls or 4 pieces of white bread with the crusts cut off.
Instructions
  1. Throw all the ingredients into a food processor and process until it is a thick paste.
  2. Spread thickly on the dinner rolls and enjoy, or
  3. spread thick on one slice of white bread and place another piece on top and cut in an asterisk formation to create 8 small triangles.
Notes
  1. Some people like to add pickle relish, some like to add green olives. I'm a purist and wouldn't taint a perfect snack food - although I might consider adding black olives when I make this again.
